🎬 The Hundred Foot Journey
I saw something this morning float by in the stream claiming that France has the ‘best restaurant in the world’. Quite apart from a personal objection to applying words like ‘best’ to something that is a qualitative opinion … I was reminded of this exchange from the movie.

”What is this flavor that is fighting against the chicken ?”

”I added some spices for flavor to the sauce, and coriander for garnish and freshness.”

”But why change a recipe that is 200 years old ?”
Hassan
”Because, madam, maybe 200 years is long enough."
